First, Congratulations on getting three objects of pure Love, because these cars need lots of it to keep them in top condition.
For your brakes, there are a couple of options you can go to the one I like is switching over to a full cup rubber seal with a spring behind it (like the old GM units). I go over it in some detail in the Anzhonda600owners group. You will first have to find some one that will brass sleeve your cylinders.
try Sierra Specialty Automotive at www.brakecylinder.com they have done some work for me in the past and it has always been first rate. Miles Chappel gave me their link a while back. Miles also has some seals and if you want to stay original, you might want to talk to him.
The pistions for the front calipers are a different story, if they are showing any pitting you will have to have them rechromed. The cylinders are ok because the seal is to the pistion not the like the rear cylinders.
And since your going to be redoing your whole system, I would look into using DOT 5 fluid.
