U can get full gasket sets from Steve Allen.   Good quality and great price.

Hi Charles,
I'm working on a rebuild right now too.  Most of those parts can be found between these two places/organizations:
http://honda600shop.com/parts.php?Category=N+%26+Z+600
http://www.honda600carparts.com/engine.html
http://www.ebay.com/usr/eagle-hd
The first two have a lot of new reproductions including complete gasket sets, complete rubber seal sets, reproduction pistons with rings, etc, etc.  The 3rd has pulled used parts.  The parts I've ordered from him have all been within wear limits according to manufacturer specs.
Probably the best thing to do would be order what you can from there and then post an updated list here of parts you're still looking for.

Actually, my slightly groggy brain missed the "NOS preferred bit", so sorry for the slightly off base reply.
I'm throwing things at you on the off chance you might not already be aware of those resources, but Ming's is supposed to have a lot of NOS stuff and specializes in higher end restorations (and reportedly likes cars a lot more than he likes people):  http://mercilessmingshondan600.itgo.com/
Otherwise, it seems like you're asking in the right place!

Hi Scott, Thank you so much for this informaiton. I really appreciate it. While NOS is my preference, I am receptive to reproduction or good used parts if necessary. This will be a very nice, presentable driver and not a show car rebuild.
Thanks,
Charles
