I have used A-2 and D-2 for sleeves because I use it for all kinds of tooling and I know alot about the materials.
But, it might not be the best, always willing to try something else.
When heat treating to the max hardness, cracking is a concern.
I have had A-2 sleeves crack when I pressed them on. Now I bring the Rc down to the 58-60 range.
Not sure what wall thickness you are trying to work with.
I like your idea of grinding an existing suitably sized bearing housing. I really know nothing about the Honda 600 crank bearing setup, but from what others say nothing else fits it.
You sound like your experienced in machining.
