Will the z600 windshield fit the n600? Will any other windshields fit?

No it won't. But If I was between a rock and a hardspot, Here's what I would do. I would use lexan in place of the glass. Now before others get bent out of shape on this, let me say that it is used as windshields in other areas (airplanes, showcars, motorcycles, etc). The one thing that will kill a plexiglass or lexan windshield is windshield wipers. You will need to use Rain-X on it and not use wipers.
Now, I only view this as a temporary solution until you have a real glass windshield show up. (I sure hope your seal is still good).

windshield seals
Let's say the last good used seal that would be reusable would have
been 1985. When I started working on Honda 600's back in 1981, 10
years after the seals were new. Doubt you will find a good used seal
anymore. Even the car I restored 2 years ago that was parked inside
for 20 years with a blown crank had a rotten seal. Bill Colford has
the new windshield gaskets.
Have a look at the new database I started, it's just under the Links
on our Home Page. There's a list of interchangeable parts and
suppliers designed to help with parts.

Re: n600 windshield contact number below and was quoted shipped for
Any chance you're wanting to part with it? I have yet to do a search
for parts cars in my area, but if I can't find anything I'm seriously
considering buying another car in Seattle and either using it as a
parts car or mine as a parts car, depending on which one is in better
shape.

at 2 more Honda 600's today.

Re: n600 windshield contact number below and was quoted shipped for
Hi Paul. Boy is my face red :-S
I will probably have to wait until I get the car in to determine
exactly what I need in terms of parts. That might be another few weeks.
I'm starting to think I should have purchased your car instead of the
one in Chicago, but what is done is done. I think that any car is
going to take a huge amount of work to get back in "good" condition.
Looks like my gamble on the car in Chicago may make it so I have a
little more work than your car would have given me. Such is life.
I will have a list of needed parts on this website as soon as my car
arrives.
Just out of curiousity, how would anyone go about shipping a
windshield? It must be extremely expensive to do. I wonder if there
is a "port to port" option for such transactions.
