   I would guess the "downdraft Ford Carb" to be a "Veriabil Volicity Carb" as is the "Webber" sorry about the spelling I am a mechanic not a H.S. grad.! I think the big let down on performance up grades with these things is  they can't cope with the instant open intake, it is not a V-8, V-6, inline 6 / 4.
  2 pistons that's it, manifold vacume drops to 0.0 when you instant open this kind of carb on this kind of motor. There are "Constant Vilocity Carbs" ( like the one made for this motor) out there that could be workable, but lots of time, exhaust gas anelizer & R.P.M. study & lots of plug reading, if you   rebuild the O.E.M. carb with new o-rings / jets and a good ground cable from the motor to the frame so you dont fry that thingy with the wire comming out of the carb. Make sure your gas tank is cleaned and linned with with a product like "Northern Tank liner", and you have replaced the fuel lines, to hell with the speedo cable and guitar strings . You have established and proper float leval with the idle jet rubber plug in place, these carbs will work just fine! Well Ok you got me there, But They will..... work, they will get some gas millage & they have since 1971 havent they? . What I have used to make sure I am in fact getting  fuel pressure to that carb at all times.  low pressure gauges like 0 to 25 or real fuel gauges 0 to 15 p.s.i and "T" them just in front of the carb and mount gauge in /under / on dash, or roof support L.H.S. heck while you are in there doing "Performance Upgrades" put one of these low presure gauges in your oil pump circut, NOPE, it will not be 40 P.S.I. @ idle it will scare ya.

Over the years I have built several 45 HP engines using the special head, cam and several different carbs, hot coils, electric fans and so on, currently my N600 is running a standard Kehin carb on this type of set up and runs very well, and is for sale also.
