Took my 71 Sedan to my local Honda dealer for a tune-up because it was
running rough. The diagnosis is that it has a bad manifold gasket and
there's gunk in the carburetor.
Does anyone have or know where to get the manifold gasket? I don't
care that it's authentic, just something that works. Also, does anyone
do carburetor re-builds?

As someone else noted, the manifold "gasket" is just an o-ring.
If you can't find the correct
sized o-ring, you can buy one which is slightly larger, cut it, and fit it to size. When you cut it,
do a 45 degree cut so it seals better (don't use a straight (90 degree) cut).
You can also use Permatex (or similar) sealer where the o-ring goes.
Also, the clamp which holds the carb to the intake manifold needs to be tightened to seal the carb properly. I have noticed the "rubber" which the intake is made of becomes hard with age and the carb may not be sealed properly which gives the same problem as a bad o-ring on the intake.
Your carb probably does not need to be rebuilt as much as it needs to be cleaned. Removing the float bowl
gives access to everything and allows it to be cleaned. You can use a spray can of carb cleaner to perform this task. It is also a good time to verify the needle and seat are sealing properly. You can do this by connecting a hose to the fuel intake line, blowing into it and lifting the float up and down to see if it shuts off properly. This is also a good time to check the float level which is an easy adjustment (you are just bending a metal tang). Let us know if you have any questions.

Honda still has these o rings in stock under a later model part number. I order them all the time. Will dig up the number later today.

Thanks for everyone's help!
Now, all of a sudden she's not getting any juice from the battery
(fully charged). Started & ran (a bit rough) yesterday and today
absolutely nothing! Very frustrating.

My original "O" ring measures at 2.6mm X 45.5mm and the manifold OD for the O ring is 49mm at the out side. Subtract the 2.6mm thickness of the O ring and your there. The parts manual has some issues, like the part numbers for the rear brake cylinders and a number of the bolt lengths to name a few.
