I am not sure where people are buying gasket sets. You can buy gasket material and make your own if you get in a pinch. The head gasket is going to be the tough one to find since it would not be easy to make.
With regard to the cylinder head......when the engine has been run for several hours the valve cover is hot enough to boil water and since the aluminum pistons are not melting, the temperature of the head must be something between 212 and 1000 degrees F. Do you really need to know the head temperature? Since these cars live and die by the condition of the engine oil, I would rather know the oil temperature and the oil pressure.
