N600 with a slight hesitation

I have been driving my 600 for a few months now and everything is great. I got all the little things fixed and cleaned and I couldn't be happier with my purchase.....the only problems I seem to have are these:
1. My car seems to take a VERY long time to warm up and run properly. I have to pull the choke and leave it out for atleast 3-5 min before I can go anywhere or it will stall when i come to a stop. Not sure if this is just a common thing with the little 2 cyl air cooled engines, but just thought I would ask if anyone knows what may be causing this.
2. When accelerating and at higher speeds, the car runs perfect, however if I am going through a slower speed limit zone and I keep the throttle at 50% or lower, it seems to have a wierd hesitation. Like its starving for fuel or something, almost chuggs along when this happens. I have changed the fuel filter with no difference. I am somewhat mechanical, but have never really worked on an engine like this, so I don't know where to start!
Any help would be GREAT!!!!

take the fuel bowl off and clean the tiny screen under the needle and seat.......

Mine was like this when the valve lash was wrong, slightly too tight I think. Follow the procedure in the manual, no shortcuts.

I had the exact same symptoms and it turned out to be a vacuum leak. The intake manifold on my car had some cracks in the rubber on the underside that I didn' t see when I put it in. It may look perfect on the inside of the manifold but that doesn't matter as air can go through holes that you can't see. I replaced the intake manifold and the long warm-up time and hesitation, dying at a stop, etc, all went away immediately!
